Shonta's Grilled Mediterranean Salmon

Treat yourself like royalty with this one-of-a-kind grilled salmon entree. This gourmet dish is full of flavor and packed with a delicious combination of mediterranean ingredients that will stir your soul.
Here's what you'll need:
- Salmon filets
- Fresh tomatoes
- Fresh onions
- Fresh cilantro
- Fresh lime
- Fresh baby spinach
- Crumbled feta cheese
- Extra virgin olive oil
- Prince's Brown Sugar Chipotle Rub
Here's what to do:
Stuffing
- Dice tomatoes, onions, and cut up cilantro and combine in a bowl.
- Squeeze fresh lime juice into the bowl.
- Add the fresh baby spinach and the feta cheese to the bowl.
- Add olive oil to the bowl.
- Stir to coat all of the ingredients with olive oil. (add more oil if needed)
- Toss everything in a skillet and cook for 5 to 7 minutes or until cheese begins to melt and spinach leaves wither.
- Set aside.
Salmon
- Slice each salmon filet starting from the side of the filet and going across the center (horizontally) to create a space for the stuffing.
- Rub the skin side of each filet with olive oil.
- Season the salmon skin on top and open the salmon to season inside with Prince's Brown Sugar Chipotle Rub.
- Stuff the salmon with the mixture from the bowl.
- Grill with the skin down at about 450 degrees Fahrenheit for about 6 to 8 minutes.
- Flip the salmon over and grill for another 1 to 2 minutes.
The USDA recommended cooking temp for fish is 145 degrees Fahrenheit. Check your meat temperature to be safe.
